Nourish Bake-Off Winner: Earl Grey Rooibos Chocolate Loaf Cake

This delectable recipe is the winner of the 2019 Nourish Bake off. We hope you enjoy it as much as we did in the office!

Method

  1. Preheat oven to 180c
  2. Grease a loaf tin with butter and line with baking parchment
  3. Take 3 Earl Grey rooibos tea bags and put in a mug with 150ml of boiling water (brew for 5 mins)
  4. Combine dry ingredients in mixing bowl
  5. Melt butter (60g) in small saucepan
  6. Whisk 1 egg into yoghurt (125g)
  7. Add brewed tea (liquid only)! to yoghurt/egg mix and mix with butter
  8. Mix in wet ingredients gradually until it reaches a smooth consistency
  9. Spoon into loaf tin and bake for 35 minutes
  10. Add desired toppings
  11. Enjoy!

This Earl Grey Rooibos Chocolate loaf cake comes from Darren McCarthy. He won the 2019 Nourish Bake-Off with this delicious take on a chocolate loaf cake.

This cake is gluten-free since it uses rice flour and millet flour instead of wheat or spelt. If you’re hoping to make it dairy-free then swap out the butter for vegan butter and the yoghurt for coconut yoghurt.
Additionally, make a flax egg if you’re hoping to make it vegan. This is a very versatile cake 🙂

If you’re unsure what earl grey actually is, it’s a black tea flavoured with bergamot essential oil flavour. Bergamot is a fragrant citrus fruit from the tropical, Citrus bergamia plant. It has a distinctive, heady fragrance and flavour that works wonderfully in cakes as well as in a cuppa.

And then we have rooibos, AKA redbush or red tea. This tea is made from the leaves of the rooibostee, a shrub native to the mountains near Capetown in South Afrika. It offers a caffeine-free, low tannin beverage with a characteristically sweet and fragrant taste. Furthermore, this tea is brimming with over 37 natural free-radical fighting antioxidants, minerals, vitamin C and alpha-hydroxy acids.
