Nourish Bake-Off Winner: Earl Grey Rooibos Chocolate Loaf Cake

3 Organic Earl Grey & Rooibos Tea Bags

60g Organic Brown Rice Flour

60g Organic Millet Flour

200g Coconut Sugar

50g Cacao Powder

1tsp Bicarbonate of Soda

60g Butter

125g Natural Yogurt

1 Egg


Syrup of Choice

Desiccated Coconut




  1. Pre heat oven to 180c
  2. Grease a loaf tin with butter and line with baking parchment
  3. Take 3 Earl Grey rooibos tea bags and put in a mug with 150ml of boiling water (brew for 5 mins)
  4. Combine dry ingredients in mixing bowl
  5. Melt butter (60g) in small saucepan
  6. Whisk 1 egg into yogurt (125g)
  7. Add brewed tea (liquid only)! to yogurt/egg mix and mix with butter
  8. Mix in wet ingredients gradually until it reaches a smooth consistency
  9. Spoon into loaf tin and bake for 35 minutes
  10. Add desired toppings
  11. Enjoy!
