Breakfast: Overnight Oats and Chia

This breakfast is so versatile and is a healthy, refreshing start to the day.
Here we serve the overnight oats and chia with seasonal fresh fruits. These can be added just before serving, or alternatively from the start if you like them well blended.

Serve them in smaller portions for reluctant children; they will love them in pots, layered with colourful fruits and drizzled with honey and nuts.

  1. Measure and mix the ingredients into a jar or bowl and cover
  2. Leave them overnight in the fridge
  3. The next morning, stir the mixture and add flavourings or fruits of your choice
  4. TIP: Home-made almond milk works particularly well with this recipe

This overnight oats and chia recipe is a super-easy way to prepare breakfast ahead of time for a quick and easy start to the day. Plus, it’s a great option for busy families. Simply soak your oats and chia seeds in almond milk overnight in the fridge. As a result, this allows them to soften and bulk up to a creamy consistency.

The milk can be any plant-based milk of your choice. For example almond, coconut, rice, pea or oat. Additionally, you can sweeten the oats and chia if you like with some honey or maple syrup. The Wooden Spoon Raw Honey is delicious here, as is Vertmont Maple Syrup.

Similarly, toppings are also a delicious addition. I’m a huge fan of bee pollen, goji berries, mulberries, cacao nibs and hemp seeds. Naturally, however, you can choose your favourites 🙂
