Mixed Bean Summer Salad

This is a really simple salad that works well as a side dish or light meal.
The soft comforting beans are enlivened by a generous mix of herbs and fresh crisp summer vegetables.

It’s rich in protein, complex carbs and good fats to give you a good hit of nutrition whilst simultaneously satisfying your hunger.

Ingredients

  • 200g of cooked mixed beans
  • 2 large ripe tomatoes
  • 2 celery stalks (leaves removed)
  • 4 or 5 radish
  • 2 spring onions
  • a generous handful of basil and flat-leaf parsley
  • 2 tbsp. organic olive oil
  • juice of 1 lemon
  • pitted black olives to garnish (optional)
  • ½ tsp. Dijon mustard

Method

  1. Blend the oil, lemon juice and mustard to make the dressing.
  2. Finely slice the celery, radish and spring onion.
  3. Slice or quarter the tomatoes.
  4. Mix and arrange the ingredients with the basil and parsley leaves.
  5. Pour over the dressing.
  6. Season with salt and pepper to taste.
