Smoky Barbecue Breakfast Bean Skillet

Feed the family or a few friends in under half an hour with this colourful, tasty, easy barbecue breakfast bean Skillet.

Servings – 4


For the Beans

  • 1 medium sweet potato, diced
  • 2 tbsp olive oil
  • 1 small white onion finely chopped
  • 1 red bell pepper, diced
  • 1 can of borlotti beans, drained and rinsed
  • 1 can of haricot beans, drained and rinsed
  • 60g tomato paste
  • 125ml vegetable stock
  • 1 tbsp molasses or maple syrup
  • 2 tbsp coconut sugar
  • 1 tbsp mustard
  • 1 tsp salt
  • ½ tsp smoked paprika
  • ½ tsp chilli powder
  • ½ tsp cumin powder


To Serve

  • Grated Violife Cheese
  • Soy yoghurt or Oatly Creme Fraiche
  • Finely chopped spring onion
  • Fresh thyme or coriander 


  1. Preheat your oven to 180C (350F). 
  2. Place sweet potato on a roasting tray, drizzle with 1 tbsp of olive oil and roast for 30 – 40 minutes.
  3. Meanwhile, fry the onion in a large pan or pot with the remaining 1 tbsp of olive oil for about 5 minutes.
  4. Add the rest of the bean ingredients to the pot or pan. Bring to the boil and then simmer until your sweet potato is cooked. 
  5. Add the sweet potato and leave to simmer for a further 5 minutes.
  6. Serve beans with yoghurt, grated cheese, spring onion and herbs. A side or sourdough or a wholemeal wrap is a nice addition if you need or want something a little more.
