Biona have created this recipe, packed full of fibre and organic goodness. This beetroot falafel salad bowl makes for the perfect lunch box filler. Made with ruby sauerkraut and a host of healthy, nutrient packed ingredients to nourish your body and feed your gut.

1. Place the falafels into a frying pan over a medium heat with a small drizzle of olive oil. Fry gently until piping hot.

2. Massage the kale with the olive oil and lemon juice until soft.

3. Serve the falafels & kale with the cooked quinoa, hummus, sliced avocado and most importantly the beetroot sauerkraut – loads of it!

4. Sprinkle everything with sesame seeds.
