Chickpea Rainbow Pasta Salad

Now that we are heading into Back to School territory, take the stress out of lunches with this easy, colourful, nutritious rainbow pasta salad for the whole family. Easy to meal prep or make for all the little ones before they head off to school.

Preparation Time – 15 minutes
Cooking Time – 10 minutes
Servings – 4 – 6

Ingredients

Method

1. Place the pasta into a pot of boiling water over a medium heat. Add a generous pinch of salt. Cook for 8 – 10 minutes.

2. Meanwhile chop the veggies and place into a large bowl, along with the drained chickpeas.

3. Whisk together the olive oil, mustard, honey, lemon juice and salt in a jug or bowl. You can use a hand blender or small blender to bring the mixture together (emulsify), if you prefer.

4. Once the pasta is cooked, drain in a colander. Add a generous drizzle of olive oil and toss to coat. Allow to cool for 10 minutes.

5. Add the pasta to the vegetables and pour in the dressing. Toss well to ensure everything is coated. Season with black pepper to your own taste and toss through some fresh basil or save it for sprinkling on top.

6. Store in the fridge for four days. The perfect grab and go lunch box addition!
