Vegan Edamame Bean Pesto


Chunky, wholesome, dairy free and protein rich. You can enjoy this pesto as a dip for your favourite raw veggies, oatcakes and crackers, add to salad greens or a stir though your top tier pasta shape; serve warm or cold as a pasta salad.

  1. Place edamame beans into a pot, cover with boiling water and cook for 4 -5 minutes. Alternative place into a microwave safe dish, add a few tbsp of water and microwave on high for 4 minutes.
  2. Drain the edamame in a colander and rinse under cold water.
  3. Place the edamame, pistachios, olive oil, water, basil, garlic, lemon juice and nutritional yeast into a blender.
  4. Blend for a couple of minutes until the mixture is relatively smooth with a little texture renaming. Season to your own taste with salt and pepper
  5. Serve the pesto as a dip with radishes, baby carrots, sugar snaps, some olives and your favourite crackers or oat cakes. Alternatively use as a dressing for salad, or add to pasta for a flavorful protein rich sauce.
