Preparation Time – 10 minutes
Cooking Time – 11 – 15 minutes
Servings – 12 – 15
Ingredients
- 150g jumbo oats
- 90g plain flour (gluten free if necessary)
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon and ¼ tsp nutmeg
- 150g coconut sugar
- 60g pitted dates, chopped
- 60g toasted or raw pecans, chopped
- 110g coconut oil, melted
- 60 – 80 ml non dairy milk of choice
- 60g 70% dark chocolate, chopped
- Salt for topping, optional
Method
- Preheat your oven to 180C (350F).
- Mix together the oats, flour, baking powder, soda, salt and sugar in a large bowl.
- Add the chopped dates and pecans and mix into the flour; this will prevent the dates sticking together. Don’t add the chocolate as it may melt when you add the oil.
- Add the coconut oil, milk (enough to make a sticky dough) and mix well until evenly distributed.
- Add in the chocolate chunks.
- Use a ¼ cup measuring cup or approx. 2 tbsp (45 – 55g of cookie dough), to form cookie mounds on a non sticking baking tray. Space the cookies a couple of inches apart as they will spread. Work in batches if necessary.
- Shape the cookies with damp hands and press down a little (just to get an even edge when cooking).
- Cook in the preheated oven for 11 -15 minutes (less for softer cookies).
- Run a large cookie cutter around the cookies before they cool to reshape them if you like.
- Allow to cool on the tray for 15 minutes before transferring to a wire rack.
- Store in a sealed container at room temperature for up to one week, the fridge for up to two weeks or freeze for up to one month.
