Ingredients

For the Sauce

  • 100g frozen peas, semi thawed
  • 100g spinach, fresh or frozen
  • 1 large handful of basil (approx. 30g)
  • 2 tbsp tahini (approx. 30g)
  • 1 tbsp lemon juice; fresh or Biona bottled lemon juice
  • 1 tbsp olive oil or avocado oil
  • 100g Nush Dairy Free Almond Milk Cheese – available in stores
  • 60ml water*
  • ½ tsp salt, or to taste

Everything Else

  • 400g pasta of choice; uncooked weight
  • Parmesan or dairy free alternative – available in stores
  • Fresh basil and black pepper; optional

*Add last to reach desired

Method

1. Add all the ingredients for the sauce to a blender and blend until smooth. Add enough water to reach a pourable, smoothie-like consistency.
2. Place pasta in a pot with boiling water and cook according to packet instructions.
3. Once the pasta is cooked, drain in a colander and return to the pot. Add most of the sauce, stir over a medium heat for 3 – 5 minutes until hot and serve immediately as is or topped with a little reserved sauce, fresh basil, parmesan or dairy free alternative and a little black pepper if desired.
4. Leftovers can be enjoyed cold or warm; a great little lunchbox pasta salad!
